Bruschetta Casserole

List of Ingredients
1 pound chopped bacon, (or sausage if desired)
1 medium chopped onion
4 chopped garlic cloves
3 chopped Roma tomatoes
1 tablespoon dried parsley, or 3 freshly chopped
1 1/2 teaspoons dried basil, or 1 tablespoon freshly chopped
1/2 teaspoon white sugar
1/4 cup white wine or grape juice
salt and pepper to taste
grated Cheddar and Parmesan cheese
1/2 loaf French bread
Recipe
Slice bread into 1 inch slices and toast lightly.
Fry bacon until not quite crisp. Set aside.
Drain all but 1 tablespoon of drippings out of pan.
Saute onion and garlic in the drippings until translucent,
but not brown.
Add the remaining ingredients except cheeses and
bread and cook for approximately 10 minutes over a
medium heat, until slightly reduced.
Add the bacon to mixture and stir well.
Lay bread slices in bottom of 9X13x2" pan.
Top each with the mixture. It is ok for it to fall
between the pieces.
Sprinkle liberally with the two cheeses.
Bake at 350 just until the cheeses are melted and bubbly.
