Once you eat these you will agree - they are the best
ever cabbage rolls. Everyone I make these for go crazy
for them and they are my most requested dish. Double
the recipe as they will disapear very quickly.
Halupki in Slovak, galumbki in Polish, and
also known as stuffed cabbage rolls.
Stuffed Cabbage Rolls #10
1 large head green cabbage
1/2 teaspoon salt (for water to steam cabbage)
for the filling:
1 pound lean ground beef
6 slices cooked bacon
1 onion, finely chopped
2-3 cloves garlic, finely chopped
1 green pepper or red pepper (or both)
1 grated carrot
2 tablespoons fresh dill
1 egg
1, 15/16 ounce can diced tomatoes,
...juice drained and reserved for topping
1/2 cup uncooked rice
salt
pepper
for topping:
1, 10 3/4 ounce can condensed tomato soup
In a large bowl, combine the filling ingredients and set aside.
Remove the core from the cabbage. Steam a high heat in a
pot large enough to accomodate cabbage with a about an inch
of lightly salted water. Rotate cabbage so it is steamed evenly.
Remove and let cool slightly. Gently peel off leaves and cut out
the thick white veins to aid in rolling.
Place approximately 1 tablespoon of the filling onto each leaf.
Carefully roll them up, placing seam side down in baking dish.
Mix the tomato juice and soup together and pour over the rolls.
Cover. Bake in a 350 degree F. oven for about 1 hour. Remove
cover and continue to cook for 30 minutes.
Makes 8-10 servings.
Serve with sour cream and enjoy.
