Chicken, Leek + Broccoli Casserole

4 boneless, skinless chicken breasts
1 pound freshly cut leeks
1 pound freshly cut broccoli
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1 cup chicken stock or soup
1/2 to 3/4 cup fine breadcrumbsRecipe
Preheat the oven to 350 degrees F.
Coat a baking dish with cooking spray.
Cook the chicken separately, then cut into bite
size pieces.
Partially cook the leeks and broccoli in the chicken
stock for approximately 5 minutes.
Add chicken, cumin, salt, pepper and garlic.
Pour into the baking dish.
Sprinkle with breadcrumbs.
Cover.
Bake for about 1 hour. Remove cover.
Broil until top is brown.
Serve directly from the baking dish.
