10 ounces uncooked mostaccioli pasta
1, 10 ounce package frozen chopped spinach,
...thawed - place on paper towels and squeeze
...until dry
2 teaspoons vegetable oil
2/3 cup chopped onion
2 garlice cloves, minced
1 1/2 pounds boneless, skinless chicken breast,
...cut into 1 inch pieces
2, 14 1/2 ounce cans whole tomatoes,
...undrained and coarsely chopped
3 Tablespoons tomato paste
1 1/4 teaspoons dried basil
3/4 teaspoons dried oregano
1/4 teaspoon salt
1/4 teaspoon crushed red pepper
1/2 cup grated Parmesan cheese, divided
Cook pasta al dente to package directions, omitting salt and
fat. Drain.
Coat a large nonstick skillet with cooking spray.
Add oil, and place over med high heat until hot.
Saute onion and garlic until tender.
Add chicken; cook just until chicken looses its pink color,
stirring constantly.
Stir in tomatoes and tomato paste.
Stir in basil, oregano, salt and red pepper. Bring to a boil.
Reduce heat and simmer, uncovered, 5 minutes, stirring occasionally.
Coat a 13 x 9 x 2 inch baking casserole with cooking spray.
Combine pasta, spinach, chicken mixture and 1/2 ofcheese in a bowl;
stir well.
Pour into casserole and sprinkle with remaining 1/4 cup cheese.
Bake at 350 degrees F. for 20 minutes.
