Chili Corn Dog Casserole

Chili Corn Dog Casserole
for the chili:
1 pound lean ground beef
1 cup salsa
3/4 cup water
1, 6 ounce can tomato paste
1/2 pound hotdogs, (frankfurters), cut to 1/2 inch pieces
2 teaspoons ground chili powder
1/2 teaspoon ground cumin
for the topping:
1, 8.5 ounce package corn muffin mix
1 cup shredded cheddar cheese
1, 4.5 ounce jar of chopped roasted red peppers,
...or green chilies
1/3 cup milk
1 beaten egg
Heat oven to 400 degrees F. Grease a 2 quart casserole dish.
Brown the ground beef, then drain. Stir in the remaining chili
ingredients. Bring to a boil, then simmer on low for 5 minutes,
or until the mixture had thickened. Spoon into the casserole dish.
Mix and blend well together, all the topping ingredients. Spoon
the batter over top of the chili. Bake for 16 - 21 minutes, or until
topping is golden brown. Serve cut into like pizza wedges to serve.
Makes 6 servings. Serve with chopped green onions and additional
cheddar cheese, if desired.
