3 tablespoons butter
3 tablespoons flour
3/4 cup heavy cream
1 can (about 16 ounces) peas, liquid reserved
1 1/2 cups dried chipped beef
1/4 teaspoon ground black pepper
3 cups sliced cooked potatoes
1 teaspoon salt
1/3 cup fine dry bread crumbs
Melt butter over medium-low heat in a medium saucepan.
Blend in flour, stirring until smooth and bubbly.
Gradually add heavy cream and liquid from peas.
Cook, stirring constantly, until thickened.
Add dried beef and the peas.
In a greased casserole, place the potatoes slices.
Sprinkle with salt.
Pour dried beef sauce mixture over potatoes.
Sprinkle with bread crumbs.
Bake at 375 degress F. for 20 minutes.
Serves 4.
