    An easy ground beef casserole with potatoes, celery, onions,
    peppers, and tomatoes, along with seasonings.

    GroundBeef, Potato + Pepper Casserole, layered

    2 cups sliced raw potatoes
    1 1/2 cups chopped celery
    1 pound extra lean ground beef
    1 cup thinly sliced onions
    1/2 to 1 cup chopped green bell pepper or mixture of green and red bell pepper
    1 can (14.5 ounces) diced tomatoes
    2 teaspoons salt
    1/4 teaspoon seasoned pepper
    bell pepper rings for garnish

    Heat oven to 350 degrees F.
    In a greased 8x12x2 inch baking dish,
    seasoning each layer with a little salt and pepper,
    layer:
    potatoes
    celery
    ground beef
    onions
    bell pepper
    tomatoes.
    Sprinkle with remaining salt and pepper.
    Top with bell pepper rings
    Cover with foil and bake about 1 1/2 to 2 hours, until
    vegetables are tender.
