    Ham Noodle Casserole #3

    I made this 4/16/07 and thought it was rather dry, but tasty.
    Next time I will double the ham, probably use a penne
    pasta, make more of the sauce and only put the breadcrumbs
    on the top.

    Ham Noodle Casserole #3

    1/2 pound wide noodles
    1 cup cooked ham, minced
    1 beaten egg
    2 tablespoons melted butter
    3/4 cup room temperature sour cream
    2 teaspoons dried parsley
    salt and pepper to taste
    Italian seasoned dry breadcrumbs

    Heat oven to 350 degrees F. Butter a shallow baking
    dish.
    Cook noodles al dente to package directions; drain.
    While noodles are still warm, combine with remaining
    ingredients, except for breadcrumbs.
    Sprinkle the surface of baking dish with bread crumbs.
    Spoon the noodle-ham mixture into dish.
    Sprinkle top with bread crumbs and bake for 40 minutes
    or until mixture is bubbly and golden brown.
    Serves 4.
