Hungarian Stuffed Egg Casserole
4 hard cooked eggs
3 tbsp. softened butter
1/2 tsp. scraped onion
2 tsp. minced parsley
1 tsp. prepared mustard
Salt and pepper
1/2 c. sour cream
1/4 c. dry bread crumbs
Halve eggs lengthwise.
Remove yolks, mash.
Add butter, onion, parsley, mustard, salt and pepper.
Fill whites with mixture.
Place cut side up in a shallow baking dish.
Cover with sour cream.
Sprinkle with crumbs, dot remaining tablespoon butter.
Bake in a 400 degree oven for 20 minutes.
