    Hunter's Chicken Casserole

    2 tbsp. butter
    2 tbsp. cooking oil
    8 boneless skinless chicken breasts, (about 2 lbs.)
    1 c. sliced onions
    1 c. fresh mushrooms
    1 minced garlic clove
    3 tbsp. flour
    1/2 tsp. salt
    1/8 tsp. ground black pepper
    1 c. dry white wine
    1 c. chicken broth or made from bouillon
    1 c. diced tomatoes
    1 tbsp. dried parsley
    hot cooked rice or noodles

    Recipe



    Add the butter and oil to a large frying pan and heat together.
    Cook the chicken pieces over a medium heat for about 25 minutes, turning to brown.
    Remove the chicken to a 12x7x2" baking dish and keep warm.
    Preheat oven to 350.
    In the same frying pan, combine the onion, mushrooms and garlic.
    Saute until the onion is tender.
    Stir in flour, salt and pepper and mix well.
    Add the wine, chicken broth and tomatoes. Mix well.
    Cook and stir over a medium/high heat until the mixture is thickened and bubbly.
    Then continue cooking and stirring for 1 minute more.
    Pour the sauce over chicken in the baking dish.
    Bake, uncovered, for 30 minutes or until chicken is tender and not pink inside.
    Sprinkle with parsley, if desired.
    Garnish with some tomato wedges and fresh parsley, if desired.
    Serve with hot cooked rice or noodles.
    Makes 6 to 8 servings.
