Kielbasa + Meatball Casserole

Kielbasa + Meatball Casserole
1, 10 ounce package frozen chopped broccoli, thawed
2 medium potatoes, peeled and cubed
3 medium carrots, sliced
1 medium onion, chopped
1 pound smoked kielbasa, slice in 1/2 lengthwise
...and then cut into 1 inch pieces
1/2 pound ground beef
1, 14 ounce can beef broth
lemon pepper to taste
Coat a 13 x 9 x 2 inch baking dish/casserole with cooking spray.
In a large bowl, combine the broccoli, potatoes, carrots and onion.
Transfer to the baking dish.
Sprinkle with the sausage.
Roll ground beef into 1 inch balls and place on top.
Pour broth over casserole.
Sprinkle with lemon pepper.
Bake, uncovered, at 350 degrees F. for 1 hour or until meatballs
are no longer pink.
Makes 6-8 servings.
