Mashed Potato Beef Cube Casserole
4 tablespoon butter or margarine
1 medium onion, thinly sliced
2 celery stalk, chopped
1 chopped sweet green pepper
2 small bay leafs
2/3 cup ketchup
1 1/2 cups water
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon Worcestershire sauce
5 to 6 cups cubed cooked beef
1 cup cooked sliced carrots
2 cups mashed poatoes
In a medium skillet melt 2 tablespoons of butter.
Add the onion, celery, green pepper and bay leafs and cook
for 8 minutes over low heat.
Pour in the ketchup and water. Stir until blended well. Heat
until mixture bubbles then remove from heat.
Season with sugar, salt, pepper and Worcestershire sauce.
Remove the bay leafs and add beef and carrots. Mix well.
Pour into a casserole dish.
Spread the mashed potaoes over the top.
Coat with 2 tablespoons melted butter.
Bake at 350 degrees F. for 20 to 25 minutes.
Makes 4 servings.
