Meatloaf Casserole, from leftover
leftover meatloaf sliced about 1/2 to 1 inch thick
...(depending on how much you have)
sliced cheese of choice, (whatever is on hand,
...cheddar, jack, Swiss or a combination)
8 - 12 beaten eggs
grated cheese
Place meatloaf slices in the bottom of a baking dish.
Place a layer of cheese over each meatloaf slice.
Pour eggs over top.
Bake at 350 degrees F. for 20 minutes or until eggs
are set.
Serve with salsa and sour cream and maybe a salad
if you have the ingredients on hand or just cucumber
and tomato slices.
