Pizza PopOver Casserole
for the meat mixture:
1 1/2 pounds ground beef
1 cup chopped onions
1 cup chopped green peppers
1/2 tsp oregano
1 clove garlic minced
1, 28 ounce jar spaghetti sauce
1, 8 ounce Mozzarella cheese ball, sliced
for the popover batter:
1 cup milk
1 Tbsp. oil
2 eggs
1/2 tsp salt
1 cup flour
1/2 cup grated Parmesan cheese
for the meat mixture:
Brown meat. Add all but the cheese. Simmer for 10
minutes, stirring occasionally.
for the popover batter:
Beat milk, oil and eggs for 1 minute on meduim speed.
Add flour and salt and beat 2 more minutes until smooth.
Coat a 9x13x2" pan with cooking spray. Pour meat into
the pan and lay the cheese slices on top. Pour popover
batter over cheese, covering meat mixture completely.
Sprinkle with the Parmesan cheese. Bake for 25 - 30
minutes at 400 degrees F. Serve immediately. Recipe
