    1 1/2 lb. ground pork
    1/2 c. plain breadcrumbs
    1 well beaten egg
    1/4 c. milk
    2 tbsp. chopped parsley
    1/4 tsp. sage
    1 clove crushed garlic
    1/4 c. finely chopped mushrooms, optional
    salt, black pepper
    8 slices thinly sliced bacon
    4 lrg. potatoes, peeled and thinly sliced
    1 - 2 tbsp. melted butter
    4 large tomatoes
    1 c. grated cheese

    Recipe



    Preheat oven to 400. Grease well an oblong baking pan.
    Combine the pork, breadcrumbs, egg, milk parsley, sage,
    garlic, mushrooms, salt and pepper, and mix thoroughly.
    Form into eight sausage roll shapes.
    Wrap each in a slice of bacon and set aside.
    Place potato slices in pan.
    Season with salt and pepper.
    Brush the potatoes with melted butter.
    Arrange the pork rolls across the center of the pan and cover.
    Cook for 30-40 minutes.
    Cut tomatoes in half and place around the edge of pan.
    Sprinkle the grated cheese over the top of pork and tomatoes.
    Return to oven and cook uncovered for a further 10-15 minutes or until potatoes are tender and cheese is golden brown.
