Pork + Squash Casserole

Pork + Squash Casserole
1 pound ground pork
1/2 teaspoon garlic salt
1/4 cup fine dry Italian bread crumbs
3 Tablespoon grated Parmesan cheese
6 ounce ball Mozzarella cheese, sliced
1/2 pint sour cream (a pint is 2 cups)
6 summer squash, each about 5 inches long*
salt and ground black pepper
Fry pork until meat loses its pinkness. Drain fat.
Then stir in garlic salt, crumbs, 2 tablespoons of the
Parmesan cheese and the sour cream. Set aside.
*Cut squash in thin lengthwise slices.
Sprinkle lightly with salt and pepper.
In a greased shallow 2 quart baking dish, arrange
about 1/2 of the squash slices.
Spoon pork mixture evenly over top.
Cover with remaining squash slices.
Covere and bake at 350 degrees F. for 35 minutes.
Uncover, arrange Mozzarella cheese slices over top
and sprinkle with remaining Parmesan cheese.
Bake uncovered 10 minutes or until cheese is golden.
