    Potato Skin Casserole

    4 cups white potatoes, sliced about 1/4"
    1/2 cup sweet green/red bell pepper, sliced into strips
    1/2 cup onion, sliced into rings
    6-8 Tablespoons butter
    1 1/2 cups grated cheese, (mixture 1/2 Monterey Jack
    ...and Cheddar works well)
    1 cup cooked crumbled bacon, (may use REAL bacon bits
    ...sold in stores)

    Melt butter in 13x9x2 inch baking dish.
    Layer potatoes, bell pepper, onion.
    Cover and bake at 400 degrees for about 30 to 40 minutes,
    until the potatoes are tender.
    Remove cover. Sprinkle with cheese and bacon.
    Recover until the cheese is just melted.
