    Reuben Casserole #1

    10 ounces rye bread, cut into 3/4 inch cubes
    3 1/2 cups chopped green apples
    1 1/4 cups very thinly sliced red onion
    1, 16 ounce container sauerkraut, rinsed and drained
    1/4 cup Dijon type mustard
    1/4 cup mayonnaise
    1/2 pound grated Swiss cheese, (8 ounces)
    1/2 pound thinly sliced corned beef brisket, coarsely chopped

    Crisp bread in 400 degree F. oven for 10 minutes. Spoon
    half of bread into shallow 2 1/2 quart baking dish. In bowl
    combine apples, onion, sauerkraut, mustard, mayonnaise
    and 1/2 of cheese. Spread 1/2 of mixture over top bread cubes.
    Spread chopped corned beef evenly over mixture. Top with
    remaining apple mixture. Cover tightly with foil and bake at
    350 degrees F. for 50 to 60 minutes, or until apples are tender.
    Sprinkle with remaining bread cubes. Top with remaining cheese.
    Bake uncovered 20 minutes more. Makes 6 servings.
