    Sausage Florentine Casserole

    4 cups pasta, cooked al dente
    1, 10 - 16 ounce package frozen chopped spinach,
    ...thawed + squeezed dry
    1, 10 3/4 ounce can cream of celery soup
    1 minced garlic clove
    1/2 teaspoon dried tarragon
    1/2 teaspoon dried marjoram
    salt and pepper, to taste

    1 pound sausage of your choice, cooked, drained + chopped
    1 large chopped onion
    3 eggs
    1, 15 - 16 ounce container ricotta cheese
    3/4 teaspoon garlic powder
    1 - 2 chopped or sliced tomatoes

    Preheat oven to 375.
    Butter a flat 3 quart casserole dish. Pour in pasta.
    Combine spinach, soup, garlic and seasonings in a small bowl. Spread evenly over pasta noodles.
    Mix sausage and onion together; pour over spinach mixture.
    Blend eggs, garlic powder and ricotta together well.
    Spread over top of the rest.
    Bake for 25 - 30 minutes or until golden.
    Sprinkle chopped tomato over top and heat 5 -10 minutes more.
    Allow to cool slightly.
