    Sausage Stuffing Casserole

    1/2 pound ground sausage
    1/4 cup butter
    1 egg, lightly beaten
    1 cup sliced celery
    1/2 medium onion, sliced
    1/4 cup sweeet green bell peppers, sliced
    2 garlic cloves, minced
    2 cups chicken broth
    6 cups herb seasoned bread stuffing mix (cube type)
    1/4 cup grated Parmesan cheese
    1/2 teaspoon ground black pepper

    Heat oven to 325 degrees F.
    Butter a 2 quart baking dish.
    In a large skillet, cook sausage over medium heat until no longer
    pink. Drain and remove from skillet. Set aside.
    Pour any grease from skillet and melt butter.
    Add celery and onion. Saute until slightly tender, 2-3 minutess.
    Stir in the green pepper and garlic. Continue to saute until all the
    vegetaables are tender.
    In a large bowl, place sausage, stuffing mix, celery mixture, cheese
    and pepper. Add broth and egg. Toss to mix.
    Spoon into prepared dish. Cover and bake for 35 minutes.
    Uncover and bake an extra 10-15 minutes or until lightly browned.
