Sausage + Mashed Potato Casserole

1 lb. bulk, (loose) pork sausage
2 sliced apples
2 sliced onions
1 tbsp. flour
salt and pepper to taste
1/2 tsp. poultry seasoning
1 c. chicken stock or use made from bouillon cube
2 - 3 c. mashed potatoes,

Preheat oven to 350. Need a 8 or 9" casserole dish.
Cook the sausage until almost done.
Drain and place in the casserole dish.
Cook the apples and onions in the sausage grease, on a low heat, for 10 minutes.
Spoon over top of the sausage.
Pour off all but 1 tablespoon of the grease.
Add the flour and brown.
Add the salt, pepper and poultry seasoning and stock; stir until thickened.
Pour the sauce over top of the apples and onions.
Spread the mashed potatoes on the top.
Bake for 20 - 30 minutes, or until the potatoes turn golden.
Makes 4 - 5 servings.
