    Spinach, Bacon + Cheese Casserole

    List of Ingredients




    2 10oz. pkgs. frozen spinach, thawed, drained and squeezed as dry as possible
    1 med. diced onion
    8 slices raw bacon, chopped small
    1 16oz. can diced canned tomatoes, (or chef style), (can use a bit more if you want)
    1 tsp. salt
    1 tsp. ground black pepper
    1/2 c. tomato sauce, (4oz.)
    1/4 lb. shredded Swiss cheese
    1/4 lb. shredded Monterey Jack cheese
    1 c. seasoned bread crumbs
    3 tbsp. melted butter

    Recipe



    Preheat oven to 350. Butter a 2 quart casserole.
    In a frying pan, cook bacon and onion until about 1/2 done.
    Mix with the spinach and pour into the bottom of casserole.
    In another bowl mix tomatoes, salt, pepper and tomato sauce.
    Pour over top of the spinach mixture.
    Sprinkle both cheeses on top of that.
    Mix bread crumbs and butter together and scatter on top of everything.
    Bake for 25 - 30 minutes.
    Makes 6 servings.
