Spinach Spaghetti Casserole

cooking spray
8 ounces uncooked spaghetti pasta, cook al dente to
...package directions, omitting any salt and oil, drained
2 eggs, beaten
1/4 cup finely shredded Parmesan cheese
1/2, 10 ounce package frozen chopped spinach, thawed,
...drined and squeezed dry
3/4 pound ground pork, chicken, turkey or veal
1/3 cup chopped onion
2 cups your favorite store bought spaghetti sauce
3/4 cup shredded part-skim mozzarella cheese (3 ounces)

Recipe



Preheat oven to 350 degrees F.
Coat an 8x8x2 inch baking dish with cooking spray.
Toss spaghetti with egg and Parmesan cheese.
Pour in bottom of baking dish.
Coat a large nonstick frying pan with cooking spray.
Saute meat and onion, stirring to break up meat.
Drain off any fat.
Stir in spinach and saute until any remaining liquid
from spinach is gone.
Stir in the spaghetti sauce.
Pour over top of pasta in baking dish.
Sprinkle with mozzarella cheese.
Cover with foil and bake 40 - 45 minutes or until bubbling.
Let set 10 minutes before serving.
