Squash + Frito Casserole, stove top
5 to 6 medium yellow crookneck squash
.....peeled and cut 1/2 inch thick
1 small onion, chopped
2 Tablespoons butter
1/4 to 1/2 cup crushed Fritos
1 egg, well beaten
3/4 cup crushed Fritos
salt and pepper to taste
1/2 cup grated cheese
Saute squash and onion in butter until onion is limp.
Cover and simmer over low heat until squash is almost
cooked (add a small amount of water if necessary).
Break up squash with a spoon.
Add egg, Fritos, salt and pepper.
Stir to combine.
Cook over low heat 5 to 10 minutes until completely cooked.
Top with grated cheese and let melt.
Remove from heat and top with crisp, crushed Fritos.
Serve immediately.
