Halupki in Slovak, galumbki in Polish, and
also known as stuffed cabbage rolls.
Stuffed Cabbage Rolls #12
1 pound ground beef
1 pound ground pork
2 teaspoon salt
1/2 teapsoon ground black pepper
3/4 cup coooked rice
1 small onion, grated
2, 8 ounce cans tomato sauce
12 large cabbage leaves
1 Tablespoon vegetable oil
1/4 cup brown sugar
1/4 cup lemon juice or vinegar
Combine first 6 ingreadients with 1 can of the tomato sauce.
Cover cabbage leaves with boiling water for 3-4 minutes; drain.
Place equal portions of meat mixture in center of each leaf.
Roll up, folding ends over and tucking them in securely. Fasten with toothpicks
Brown in hot oil in heavy skillet
Mix remaining can of tomato sauce with brown susgar and add lemon juice.
Pour over hot rolls.
Simmer, covered, 1-1 1/2 hour, basting occasionally.
