Taco Tot Casserole

List of Ingredients




1 lb. lean ground beef
1 1.25oz. pkg. reduced sodium taco seasoning mix
1 14 1/2oz. can corn, drained
1/2 chopped small green or red pepper
2 tbsp. butter
1 10 3/4oz. can nacho cheese soup, undiluted
4 c. tater tots, onion tater tots, or hot tots
salsa and sour cream, optional

Recipe



Heat oven to 375. Need an ungreased 11x7x2" or 2 quart baking dish.
Brown the ground beef and add the taco seasoning mix.
Spoon meat mixture into casserole.
Sprinkle corn over meat mixture.
Saute chopped pepper in butter and then sprinkle over corn.
Spread the soup over the peppers.
Place tater tots in a single layer over soup.
Bake 40 to 45 minutes or until potatoes are lightly browned and the mixture is bubbly.
Makes 4 servings.
Serve with salsa and sour cream, if desired.
