    Poor Man's Steak Casserole

    I made this tonight, 11/13/08. It had a good flavor
    but the rice never cooked. So I think the rice
    should be precooked and then cut the baking time.

    Poor Man's Steak Casserole

    2 Tablespoons butter, cut into pieces
    1 cup rice
    1 freshly grated carrot
    1 1/2 pounds ground beef
    1 packet onion soup mix
    1, 10 3/4 ounce can cream of celery soup
    1 soup can water

    Sprinkle rice into bottom of square baking dish.
    (8x8x2 is ok, but 9x9x2 would give it more room)
    Sprinkle with carrot, then ground beef.
    Sprinkle dry soup mix over top the beef.
    Spread soup evenly over mixture.
    Pour can of water over top.
    (I mixed the soup and water together and poured
    it over the top.)
    Cover with foil.
    Bake at 325 degrees F. for 2 hours.


    This may also be layered in a crockpot/slow cooker
    and cooked for several hours.
