    Cabbage + Cucumber Relish #1

    Recipe Introduction

    This one has a sweet and sour flavor.

    List of Ingredients

    3 quarts finely chopped green cabbage
    3 quarts finely chopped cucumbers
    3 quarts finely chopped onions
    canning salt
    6 cups white granulated sugar
    6 cups white vinegar
    1 finely chopped green pepper
    1 finely chopped red pepper
    1/2 cup flour
    2 tablespoons celery seed
    1 tablespoon dry ground mustard powder
    1 tablespoon ground tumeric

    Recipe

    Combine the cabbage, cucumber and onion together
    in a large bowl.
    Sprinkle with some canning salt and let set for 3 hours.
    Drain, then squeeze any excess liquid off.
    Use a large bowl to combine
    Pour the cabbage mixture into a large pot.
    Add the sugar, vinegar, peppers, flour, celery seed, dry
    mustard and tumeric. Make sure everything is mixed well.
    Use a medium heat and cook for 30 minutes.
    Pour into hot, sterilized jars and seal.

    (It is best if you seal jars following Blue Ball canning book
    guidelines.)
