Cabbage + Tomato Relish

List of Ingredients
2 medium size tomatoes, quartered
1/4 small roughly chopped head cabbage
1 large chopped yellow onion, quartered
1 cup red wine vinegar
1/2 cup + 2 tablespoons white granulated sugar
1 teaspoon Dijon style mustard
3/4 teaspoon ground turmeric
1/4 generous teaspoon celery seeds,
...(not leveled but not overflowing)
1/4 generous teaspoon ground cloves
1/4 generous teaspoon ground cinnamon
Recipe
Place the tomatoes, cabbage and onion in a blender/
food processor and chop. Set aside.
In a heavy medium size saucepan, place the vinegar,
sugar, mustar, turmeric, celery seeds, cloves and
cinnamon; and bring to a boil.
Add the vegetables from the blender. Let simmer
for 15 minutes, occasionally stirring, or until tender.
This should be thin.
Let cool. Then cover and refrigerate. Serve well
chilled and drained.
Makes about 4 cups.
Note: May be prepared 5 days in advance.
