Recipe Introduction
This sweet and savory relish can be served in place of pickles with
a sandwich, or as a refreshing summer snack.
List of Ingredients
Celery Relish #2*
1 bunch celery, cut into 1/2 inch pieces, (1 cm)
6 sweet green bell peppers (capsicums),
...cored, seeded, and chopped
6 sweet red bell peppers (capsicums),
...cored, seeded, and chopped
2 chopped onions
2 cups distilled white vinegar, (500 ml)
2 cups granulated white sugar, (500 ml)
2 Tablespoons salt, (30 ml)
1 Tablespoon mustard seeds, (15 ml)
1 Tablespoom celery seeds, (15 ml)
1 teaspoon hot pepper flakes, (5 ml), optional
Place the celery, peppers, and onions in a large bowl
and cover with boiling water. Let stand for 10 minutes.
Drain and repeat with additional boiling water. Drain
the vegetables and place them in a non-reactive (not
aluminum) pot along with the remaining ingredients.
Bring to a boil over high heat. Reduce the heat, cover
and simmer for 15 minutes.
Pack into jars sterilized. Seal according to the
manufacturer's directions.
