Green Tomato Relish #3
4 quarts chopped cored green tomatoes, (about 32 medium)
2 quarts chopped cabbage, (about 1 large head)
2 cups chopped sweet green peppers, (about 4 small)
1 cup chopped onion, (about 1 medium)
1/2 cup salt
1 1/2 cups packed brown sugar
2 tablespoons mustard seed
1 tablespoon celery seed
1 tablespoon bottled plain horseradish
4 1/2 cups white vinegar
Place the tomatoes, cabbage, peppers and onion into a
non reactive pot large enough to hold everything. Sprinkle
with the salt and mix thoroughly. Let set for 3 - 4 hours.
Drain. Rinse lightly and thoroughly drain again.
Combine the sugar, mustard and celery seeds, horseradish and
vinegar in a saucepan and simmer for 15 minutes.
Add the spice mixture to the vegetables and bring to a boil.
Pack hot relish into hot jars, leaving 1/4 inch space at top.
Seal and process for 10 minutes.
