    Pickled Dilled Green Beans

    List of Ingredients

    2 quarts + 2 c. water
    2 lbs. fresh green beans, washed and trimmed
    1 tsp. salt
    2 tsp. mustard seed
    2 tsp. dried dill
    1 tsp. dill seed
    4 minced garlic cloves
    2 c. white vinegar
    2/3 c. white sugar
    salt to taste

    Recipe

    Bring the 2 quarts of water to boil.
    Add the green beans and boil for 5 minutes or until the beans are just tender.
    Plunge the beans in cold water to stop the cooking and to set their color.
    Drain well.
    Combine the salt, mustard seed, dill, dill seed and garlic together in a large bowl.
    Add the cooled beans to the seasonings in the bowl and stir.
    Place the 2 c. of water, vinegar, sugar and salt in a small saucepan and bring to a boil.
    Pour the mixture over the beans and spices. Mix well.
    Place in an airtight container.
    Refrigerate overnight before eating.
    The beans are best if marinated for one week before eating.
    Makes 5 - 6 servings.
