Squash Relish
8 cups chopped squash, use the color of your
...choice, or combine the 2
6 tablespoons salt
2 large chopped onions
4 large chopped bell peppers
2 1/2 cups sugar or substitute
2 cups white vinegar
1 teaspoon mustard seed
1 teaspoon celery seed
pimentos for color
Add the salt with squash and onion and mix.
Let set for at least 1 hour.
While you are waiting, mix the sugar, pepper, vinegar,
mustard and celery seeds in a non reactive pot.
Bring to a boil and let boil down.
Drain the squash/onion mixture and add to the boiled
mixture. Bring to another boil.
Pour into clean jars and seal.
Place in a hot water bath for 5 minutes.
Let cool, then store.Recipe
