    Watermelon Rind Pickles

    Trim green and pink parts of a 7 pound watermelon rind; cut into 1inch cubes.
    Partially boil until tender, but Not soft. Then drain.
    Combine 7 cups sugar,
    2 cups vinegar,
    1/2 tsp. oil of cloves,
    and 1/2 tsp. oil of cinnamon.
    Bring to a boil and pour over rind.
    Let stand overnight.
    In the morning, drain off syrup, heat and pour over rind.
    The third morning, heat rind and syrup.
    Seal in hot, sterilized jars.
    Makes 8 pints.
