    Nothing beats a good homemade sauce like this one
    that's free of all artificial flavoring and coloring.

    canning - Tomato Sauce #2*

    2 tablespoons (13g) butter, (1 ounce)
    1 medium carrot, diced
    1 small onion, diced
    1 slice bacon, diced
    1 cup (285ml) stock
    1 tablespoon (7g) flour, (1/2 ounce)
    bay leaf
    5 - 6 large tomatoes, diced
    1/2 teaspoon sugar
    salt and pepper

    Melt butter in a saucepan over a low heat.
    Add carrot, onion and bacon then toss.
    Do allow to brown.
    Add tomatoes.
    Carefully simmer for about 5 minutes
    Add flour and bay leaf to the stock.
    Then blend and stir in to the tomato mixture
    Simmer on low heat for another 30 minutes,
    stirring occasionally
    Strain mixture through a sieve.
    Add sugar. Season to taste with salt and pepper.
