    List of Ingredients

    fresh - Chicken Stuffed Peppers w/Bacon

    for the chicken marinade:
    1/2 c. fresh orange juice
    1/4 c. fresh lemon juice
    1 tsp. Dijon mustard
    1 tsp. Worcestershire sauce
    1/4 c. canola oil
    2 - 3 minced or pressed garlic cloves
    1 tsp. dried oregano
    1 tbsp. dried parsley or 1/4 c. chopped fresh
    salt and ground black pepper to taste

    for the stuffed peppers:
    12 - 15 good sized jalapeno peppers
    2 - 3 marinated chicken breasts
    bacon strips cut in half, 1/2 strip for each pepper being made, can use turkey bacon, ...if desired
    toothpicks

    for the chicken marinade:
    Combine the orange juice, lemon juice, mustard, and Worcestershire sauce in a non metal mixing bowl.
    Mix the oil in a little at a time with a whisk.
    Add the garlic, oregano, parsley, salt, and pepper and stir.
    Makes 1 1/2 cups.
    Marinade the chicken for several hours or overnight if possible.

    for the stuffed peppers:
    Cut the tops off the peppers, dice them and set aside.
    Then cut the rest of the peppers in half lengthwise.
    Clean the seeds and membranes from the inside of the peppers, wash and set aside to drain.
    Cut the marinated chicken breasts into chunks and mix with the diced pepper.
    Fill the peppers with the chicken mixture.
    Then wrap each pepper with the 1/2 strip of bacon and fasten with a toothpick.
    Place on a pan coated with non stick cooking spray and place in a preheated 350 oven or place on a heated grill and cook until the chicken is done.
