fresh - Chicken Inside Dumplings
1 whole chicken (or breasts if you prefer)
1 stalk of celery
1 small onion
1 can Hungry Jack biscuits (big ones!)
1 can cream of chicken soup
1 can cream of celery soup
Boil the chicken in salted water until tender. Cool.
Chop celery and onion finely.
Debone the chicken and dice. Mix with celery and
onion.
Flatten out the biscuit dough to a large round.
Put a heaping tablespoon of the chicken mixture in the center.
Fold and seal well.
Place the two soups in a large saucepan. Add two soup cans of
water or milk, or one of each, your choice. Bring to a boil.
Gently drop in the chicken bundles and spoon soup over to cover
dough. Cover and reduce heat. Simmer about 20 minutes.
