    Cheesecake, w/cakemix

    Cheesecake, w/cakemix

    1 package yellow cake mix
    4 eggs
    2 Tablespoons oil
    1, 8 ounce package softened cream cheese
    1, 8 ounce container of Ricotta cheese
    1/2 cup granulated white sugar
    1 1/2 cups milk
    3 Tablespoons lemon juice
    1 Tablespoon vanilla extract
    pie filling, cherry, pineapple, blueberry, strawberry, etc.

    Heat oven to 300 degrees F.
    Butter a 13 x 9 x 2 inch baking pan.
    Measure 1 cup of the cake mix and set aside.
    Use a large bowl to stir together the remaining cake mix, 1 of the eggs, and the oil.
    The mixture will be crumbly.
    Press the crumb mixture onto the bottom and 3/4 of the way up the sides the pan.
    (Or try it just on the bottom.)
    Use the same bowl to blend the cream cheese, Ricotta cheese and sugar together.
    Add the other 3 eggs and the 1 cup reserved cake mix.
    Beat until smooth.
    Gradually add the milk, lemon juice, and vanilla, and mix until smooth.
    Pour onto the crust.
    Bake for 45 - 55 minutes, or until the center is firm.
    Let cool to room temperature.
    Spoon pie filling over the top of the cheesecake.
    Cover and chill for 1 hour before serving.
    Store in refrigerator.

    May be frozen if covered with foil.
