    Crockpot - Beef Barley Soup

    List of Ingredients

    1 lb. lean ground beef or beef stew meat, diced small
    1 1/4 c. chopped or diced small carrot
    1 small diced onion
    ...or 1 tbsp. dried flakes
    3/4 c. diced celery (about 1 large stalk)
    ...or 1/4 tsp. celery seed
    5 c. water
    1 tsp. parsley flakes
    1/4 tsp. ground black pepper
    1 tsp. granulated white sugar
    2 tbsp. beef bouillon powder or cubes
    1/2 c. pearl barley
    2 c. chopped/crushed tomatoes
    ...or tomato sauce

    Recipe

    Brown beef in large frying pan until no longer pink.
    Drain grease.
    Place all ingredients in 5 quart slow cooker.
    Stir. Cover.
    Don't lift lid while cooking.
    Cook on low for 8 - 10 hours or on high for 4 - 5 hours.
    Serve with crusty bread or biscuits.
    Makes 10 1/4 cups.
