    Coconut Cream Delight

    80 Ritz type crackers, (2 stacks)
    3/4 of 1/2 gallon vanilla ice cream, softened
    ...or can use French vanilla
    1/2 cup butter, (1 stick)
    1 1/2 cups milk
    2 small packages of instant coconut cream pudding
    1, 8 ounce container frozne whipped topping, thawed
    toasted coconut

    Crush crackers with rolling pin.
    Melt butter and mix with crackers.
    Press into a 9x13x2 inch pan.
    With electric mixer, mix milk and pudding until blended.
    Add ice cream and continue mixing.
    Pour over crackers.
    Place in freezer to set (about 1/2 hour).
    Toast coconut in the oven until lightly browned.
    Remove pan from freezer.
    Top pudding with whipped topping.
    Sprinkle with toasted coconut.
    Place back in freezer.
    Remove about 2 hours before serving, and then it may
    be kept in the refrigerator.
