    Whoopie Pie - Chocolate Peanut Butter

    4 cups flour
    2 tsp. baking soda
    1 cup powdered cocoa
    dash of salt
    2 cups sugar
    1 cup shortening
    2 eggs
    1 cup milk
    1 cup warm water
    2 tsp.vanilla

    for the cookie:
    Heat oven to 375 degrees F.
    In a mixing bowl, combine the flour, baking soda, cocoa
    and salt; set aside.
    In a separate bowl mix the sugar, shortening and eggs
    together and beat for about 2 minutes at medium speed.
    Add the dry ingredients to egg mixture and mix well.
    Add the milk and warm water and beat at medium speed
    for 2 to 3 minutes.
    Add the vanilla and beat again until the mixture is
    thoroughly blended.
    Drop by rounded tablespoons full onto ungreased, non
    -stick baking sheets and bake for 10 to 12 minutes or
    until the centers of the cookies springs back when lightly
    pressed.
    Remove from from the baking sheets and cool on wire
    racks or white paper towels.
    Cool completely before spreading with filling.

    for the filling:

    2 T. butter
    1/2 cup creamy peanut butter
    3 1/2 cups powdered confectioners sugar
    1/2 cup milk

    Mix the butter and peanut butter together and blend well.
    Add the sugar and milk. Mix with an electric mixer at
    medium speed, then beat at high speed until light and fluffy.

    To make the whoopie pies:
    pread one cookie generously with filling, then top with
    another cookie.
    Wrap each whoopie pie individually in plastic wrap.
