    Dessert - Apple Pizza Dessert

    List of Ingredients

    1 pastry for a 9" single crust pie
    1/2 c. powdered or finely chopped nuts, optional
    1 8oz. pkg. softened low fat cream cheese
    3 tbsp. + 1 c. + 2 tbsp. unsweetened apple juice
    1 tsp. vanilla
    1/4 tsp. + 1/4 tsp. ground cinnamon
    2 tbsp. + 1 1/2 tbsp. sugar substitute
    3 1/2 c. sliced tart apples, (4 medium)
    1/4 c. golden raisins
    1 tbsp. cornstarch

    Recipe

    Preheat oven to 450. Need a 10" tart pan with a removable bottom.
    Roll the pastry out on a floured surface to a 12" circle.
    Place the floured side down, into the tart pan.
    Press the pastry crust up the sides. Trim and remove any excess pastry.
    Prick the bottom and sides with a fork.
    Then line with a double thickness of foil and bake for 8 minutes.
    Remove the foil and bake for 5 - 6 minutes more or until golden.
    Let cool on a wire rack.
    Beat together the cream cheese, 3 tbsp. of the apple juice, vanilla, 1/4
    tsp. of the cinnamon and 1 tsp. of the sugar substitute.
    Fold in 1/4 c. of the nuts, if using and spread evenly on the cooled crust.
    Set aside.
    In a large frying pan, combine the apples, 1 c. of the apple juice, raisins
    and 1/4 tsp. of the cinnamon.
    Bring to a boil. Cover and reduce heat to a simmer.
    Let simmer for 2 - 4 minutes or until the apples are just tender.
    Use a slotted spoon to remove the apples and raisins to a small bowl and set
    aside.
    Mix 2 tbsp. of the apple juice, cornstarch and 3/4 tsp. of the sugar
    substitute together, making sure there are no lumps.
    Add to the frying pan and cook until thickened and bubbly, stirring
    constantly.
    Continue cooking and stirring for 2 more minutes.
    Fold the apples/raisins into the glaze and spoon over the cream cheese
    layer.
    Sprinkle with remaining nuts, if using.
    Let cool. Then cover and chill for up to 6 hours.
    Makes 10 servings.
