    Cake - Apple + Cinnamon Coffee Cake

    List of Ingredients

    1/2 cup packed brown sugar
    1/4 cup softened I Can't Believe It's Butter Light
    2 large egg whites
    1/2 cup low fat buttermilk, (1 % fat)
    2 cups flour
    2 teaspoons baking powder
    1/2 teaspoons baking soda
    2 teaspoons ground cinnamon
    1/4 teaspoon salt
    1 finely chopped medium apple

    Recipe

    Preheat the oven to 375 degrees F.
    Coat a 9 inch square baking pan with cooking spray.
    Use a large bowl to beat together the sugar, butter light,
    and egg whites until smooth.
    Stir in the buttermilk.
    Add the flour,baking powder, baking soda, cinnamon, and salt. Mix until the dry ingredients are moistened.
    (This is a stiff batter.)
    Fold in the apple.
    Spread into the pan.
    Bake for 25 - 30 minutes, or until a tester comes out clean.
    Cut into 9 squares. Serve warm or at room temperature.
