    BreadMuffin - Apricot Walnut Bread

    List of Ingredients

    4 egg whites
    2/3 c. water
    1/2 c. orange juice
    1/4 c. vegetable oil
    1 tsp. vanilla extract
    3/4 c. uncooked oat cereal
    1/2 c. chopped dried apricots
    1 1/4 c. flour
    1/2 c. Splenda sugar substitute
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/4 c. chopped walnuts, optional

    Recipe

    Preheat oven to 350. Grease an 8x4x2" loaf pan.
    In a bowl, combine egg whites, water, orange juice, oil and vanilla.
    Stir in oats apricots.
    Combine flour, sugar, baking powder and baking soda.
    Stir into apricot mixture just until moistened.
    Fold in nuts and pour into loaf pan.
    Bake for 50 - 55 minutes or until tester comes out clean.
    Cool in pan 10 minutes. Remove to a wire rack.
    16 one slice servings.
