    DressingSalad - Asparagus, Orange + Endive Salad

    List of Ingredients

    Asparagus, Orange + Endive Salad

    2 1/2 c. diagonally sliced fresh asparagus
    2 c. torn endive leaves
    2 small oranges, peeled, sliced into rings and seeded
    1 small very thinly sliced red onion
    1/3 c. raspberry vinegar
    2 tbsp. canola oil
    1 tbsp. orange juice
    1 tbsp. sugar, or you may use a sugar substitute
    salt and pepper

    Recipe

    Add the asparagus to a large pot of boiling water and blanch for 1 minute.
    Drain and plunge asparagus into bowl of cold water to stop the cooking process. Drain again and dry.
    Combine the asparagus with the endive, oranges, and red onion.
    Whisk together the vinegar, oil, juice, sugar, salt and pepper to taste for a dressing.
    Add the dressing to the asparagus mixture, toss well, and serve.
    Makes 6 servings.
