    BreadMuffin - Banana Ginger Muffins

    Recipe Introduction

    *Grating real ginger into these muffins is the secret to their flavor.*

    List of Ingredients

    1 1/2 c. white flour
    1 c. whole wheat flour
    2 tsp. baking powder
    1 tsp. cinnamon
    1 whole egg
    1 egg white
    1 c. skim milk
    1/4 c. unsweetened applesauce
    2 tbsp. canola oil
    2 tbsp. Splenda sugar substitute
    2 mashed bananas
    2 tsp. FRESH grated ginger

    Recipe

    Preheat the oven to 350. Coat a 12 muffin tin with non stick cooking spray.
    Combine the flours, baking powder, and cinnamon in a medium bowl. Set aside.
    Combine egg, egg white, milk, applesauce, oil, Splenda, bananas and ginger in a large bowl and mix well.
    Slowly add dry ingredients into the wet ingredients bowl and mix until blended. Do not over beat.
    Pour the batter into muffin cups and bake for 20 to 25 minutes.
    Remove muffins from oven and let cool slightly.
    Remove muffins from pan and let cool completely.
    Make 12 muffins.
