    Dessert - Banana Puff Pudding

    List of Ingredients

    for the puffs:
    5 egg whites or substitute
    1/3 cup sugar substitute
    1 1/2 teaspoons banana flavoring
    pinch of salt

    for the pudding:
    1 cup egg substitute
    2 cups skim milk
    2 teaspoons vanilla flavoring
    4 tablespoons I Can't Believe It's Not Butter Light
    2 tablespoons cornstarch
    1/2 cup sugar substitute
    4 teaspoons banana flavoring
    4 chopped bananas
    light frozen whipped topping, thawed, optional
    chocolate shavings, optional
    fat free hot fudge topping, optional

    Recipe

    for the puffs:
    Preheat oven to 350.
    Coat a large baking sheet with cooking spray.
    Place egg whites in a clean medium bowl.
    Beat until frothy.
    Add the sugar substitute, flavoring, and salt.
    Beat until stiff peaks form.
    Drop by lightly rounded tablespoons onto the baking sheet.
    Bake for 10 - 15 minutes.
    Remove to a wire rack to cool.


    for the pudding:
    Using a medium saucepan, combine the egg substitute, milk, vanilla and
    butter.
    Blend together well.
    Stir the sugar substitute and cornstarch together.
    Then add to the saucepan and, using a wire whisk, blend well.
    Cook over a medium heat, stirring constantly, for at least 3 minutes, or
    until it thickens.
    Remove the pan from the heat.
    Add the banana flavoring and blend in.
    Let cool slightly, then add the bananas and mix lightly.
    Pour into individual dishes or pour into oblong glass baking dish.
    Place the puffs on top of the pudding.
    Chill for at least 1 hour.
    Serve garnished with topping of your choice.
    Makes 8 - 10 servings.
