Ethnic - Broccoli Burritos

List of Ingredients
10 flour tortillas
2 lb. coarsely chopped fresh broccoli
1 1/2 c. shredded low fat Monterey Jack cheese
1 large finely chopped tomato
3/4 c. finely chopped raw onion
1 8oz. can tomato sauce
1 8oz. container sour cream
freshly grated low fat Parmesan cheese
Recipe
Preheat the oven to 350. Coat a 12x8x2" baking dish with non stick cooking spray.
Wrap the tortillas tightly in aluminum foil and bake for 15 minutes.
Meanwhile, combine the broccoli, the Monterey Jack cheese, tomato, and onion together.
Spoon the mixture evenly into the center of each tortilla.
Roll each tortilla and place, seam side down, in the baking dish.
Pour the tomato sauce over top of the tortillas.
Cover and bake for 45 minutes.
Spread sour cream over top and sprinkle with Parmesan cheese, if desired.
