    CandySweets - Peanut Butter Balls

    3 cups shredded coconut
    1/2 cup diabetic peanut butter
    1 teaspoon vanilla extract
    2 cups shredded coconut

    Combine 3 cups coconut with peanut butter and vanilla extract. Mix well. Shape into 1-inch diameter balls.
    Roll balls in the 2 cups shredded coconut. Coat thoroughly.
    Place in pan lined with waxed paper. Chill thoroughly.
    Yield: 80 pieces
