    Fruit - Cantalope with Creamy Topping

    List of Ingredients

    2 cups freshly cubed cantalope
    1/2 cup plain low fat yogurt
    2 tablespoons part-skim cottage cheese,
    ...(Ricotta cheese may be substituted)
    1 tablespoon frozen grape juice concentrate
    ground cinnamon
    1 tablespoon slivered almonds, optional

    Recipe

    Place the cantalope in a bowl.
    Blend together the yogurt and cottage cheese.
    Stir in the grape juice.
    Spoon over the cantalope and sprinkle with
    some cinnamon and almonds.
    Makes 4 servings.
